Chianti D.O.C.G. – 100% Sangiovese
0% added sulphites – 100% health
This is the first step towards the realization of a dream: produce “pure” wines. PURO is made from 100% Sangiovese grapes vinified in stainless steel vats, without the addition of sulfites, yeasts and tannins. The vinification of this wine is a balancing practice: maintaining the purity of the grapes without using chemicals is not easy, but possible, and we are ready to take risks in respect of the health of our consumers .
The sulfur as an antioxidant and antibacterial is replaced physically and non chemically, with low storage temperatures, further extraction of anthocyanins and polyphenols, frequent checks of dissolved oxygen and appropriate filtration.
Vineyards: Planted between 2000 and 2002 and trained in Guyot.
Production: Approx. 1,5 kg of grapes per vine.
Harvest: Before mid October.
Vinification: Soft destemming and crushing of the grapes, spontaneous fermentation and maceration in stainless steel at a controlled temperature for about 10 days. After the malo fermentation, which starts relatively quickly due to the absence of sulphites, the wine is decanted and kept at 10 degrees celsius.
Maturation: In stainless steel for 9 months. The wine is then bottled to keep all it’s freshness and integrity.
Ageing capacity: 3-4 years.
Sensory characteristics: Intense purple color with scents of violet, juicy with evident notes of moreno cherry.
Serving suggestions: Easy drinking and perfect with all food.
Serving temperature:16-18° C. in winter, 12° C. in Summer.
